MmmONDAY!

The girls and I enjoy our weekly search at the grocery store for a new fruit or vegetable to try. Sometimes it's purple potatoes, orange cauliflower or mangoes...this week it was spaghetti squash. I had eaten it before but I thought it was great the girls chose it and wanted to try it. The most simple way to cook a spaghetti squash that I've found is to poke several holes in it, stick it in the microwave and let it cook for 10-12 minutes. Then cut it in half lengthwise and scoop out the seeds before getting out all the yummy squash to eat. The kids really liked it with a little spray butter and Parmesan cheese on top!
