
Begin with 2 pounds stew meat, coated with red curry paste (found in Asian aisle at Hy-Vee, Target and Walmart) in the bottom of crock pot. Next, pour in one can coconut milk, one cup veggie or beef stock, 1/2 head purple cabbage cut in chunks put on top of meat, and last 3 sweet potatoes peeled and diced, in sort of large chunks or to your desire on the very top. Add onions if desired. Cook on low all day or night. When sweet potatoes are tender it should be done.
