My friend Katie posted these Energy Bites awhile back and last week she shared a few with me. They are delicious and a great snack when you need some extra carbs post workout. My kids love them too and I love that they have a clean snack to enjoy after school.
NO-BAKE ENERGY BITES RECIPE
-1 cup old fashioned oats
-2/3 cup toasted coconut flakes
NO-BAKE ENERGY BITES RECIPE
-1 cup old fashioned oats
-2/3 cup toasted coconut flakes
-1/2 cup peanut butter
-1/2 cup ground flaxseed
-1/2 cup chocolate chips (could exchange with cranberries or anything)
-1/3 cup honey
-1 tsp. vanilla
Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for an hour. Once chilled pack portion sized amounts in snack sized zip lock bags. Good for a week!
