MmONDAY! Paleo Blueberry Muffins

Let's face it...a muffin is basically cake. We just call it a muffin to feel better about eating it before noon. :) Here's a recipe for a grain-free blueberry muffin. Almond meal is high in fat, but GOOD fat. Still treat these like you would any muffin. A treat to enjoy in proportion...but with these, much less guilt because of the lack of grains and refined sugars!
 
INGREDIENTS
  • 2 cups almond meal
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 1/4 cup honey
  • 1/4 cup olive oil
  • 2 tsp vanilla
  • 3/4 cup blueberries
INSTRUCTIONS
  1. Preheat oven to 350F
  2. Line a muffin tin with paper liners
  3. In a medium bowl mix together the almond meal, baking soda, and salt
  4. In a separate bowl mix together the eggs, honey, vanilla and oil
  5. Next combine the dry and wet mixtures, then add in your blueberries
  6. Fill your muffin tin with the batter and bake for 25 minutes
Preparation time: 10 minutes | Cook time: 25 minutes | Number of Servings: 6 muffins
